[Q] ADB Backup topic

Does ADB backup do the whole OS, or only apps i.e. when I restore it, can I do so in a custom OS like Cyanogenmod and then end up with my stock OS and all of my apps, contacts, sms etc.?

I'm on a One M8 using EE mobile network (UK)
